- 300 grams dried, white Beans
- 1 bay leaf
- 1 onion
- 1 garlic clove
- 250 grams Endive
- 100 grams smoked Chicken breasts
- 2 Tbsps olive oil
- 800 milliliters Chicken broth
- salt
- freshly ground peppers

Preparation steps
1.
Cover the beans with water and soak overnight.

Drain beans, place in a pot and cover with fresh water. Bring to a boil with the bay leaf and cook until tender, about 45 minutes.

Peel onion and garlic. Dice the onion and finely chop the garlic. Rinse endive, trim and cut into pieces. Cut the chicken breast into thin strips. Sauté chicken with the onion and garlic in hot oil for 1-2 minutes. Pour over broth and bring to a boil. Add the endive and simmer for about 5 minutes. Drain beans, add to the soup and serve garnished with salt and pepper.
