- ¼ cup Parmesan (freshly grated)
- 2 Tbsps fresh parsley (chopped)
- ½ tsp salt
- ¼ tsp ground Black pepper
- ¼ tsp ground Nutmeg
- 16 ozs ground Beef
- 1 slice white Bread
- ¼ cup milk
- 2 Tbsps olive oil (divided)
- 1 Tbsp butter
- ½ cup carrots (finely diced)
- ½ cup onions (finely chopped)
- ¼ cup Celery (diced)
- 1 cup Chicken broth
- 2 lemons (juiced)

Preparation steps
1.
Mix the egg, Parmesan, parsley, salt, pepper and nutmeg together with the ground beef.

Soak bread in milk; Squeeze out excess moisture and add to the meat mixture.

Heat the 1 tablespoon of olive oil with butter and stir in the carrots, onion and celery. Add a little stock from time to time to prevent them browning. Cook for 8 minutes. When the vegetables are soft and cool, add to the ground beef mixture. Roll into little balls and put in a cool place to rest for 10 minutes.

Heat remaining olive oil to medium heat. Add meatballs and cook gently until they are golden brown, about 5 minutes each side. Add the lemon juice, simmer for 5 minutes. Serve with your favorite tomato sauce.
