- 6 ½ cups carrots (peeled and diced)
- 6 eggs
- 6 tsps Corn starch
- 1 ½ cups cream
- 1 ⅔ cups Whole milk
- 3 Tbsps butter (softened)

Preparation steps
1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Cook the carrots in a large saucepan of salted, boiling water and cook for 20 minutes. Drain well and rinse with cold water.
3.
Whisk the eggs and cornflour together in a bowl. Add the milk and cream gradually, whisking all the time. Add the diced carrots and season well, mixing gently.
4.
Butter 4 individual ceramic moulds and divide the batter between them.
5.
Transfer to the oven and cook for 20 minutes.
6.
Remove the clafoutis from the oven, check the seasoning and serve immediately in the moulds.
