Baked Steak Fillets

- 500 grams ripe Tomatoes
- 2 garlic cloves
- 4 Tbsps olive oil
- salt
- 1 pinch sugar
- freshly ground peppers
- 4 filets mignon (each 160 grams)
- 2 Tbsps Double cream
- 100 grams grated Parmesan
- 1 Tbsp pickled green peppers
Preparation steps
Slice tomatoes crosswise, blanch, rinse with cold water and remove skin and stalks. Dice flesh into small pieces. Peel garlic and finely chop.
Saute garlic and tomatoes in a pan in 1 tablespoon hot oil. Add sugar and season with salt and pepper. Bring to a boil and stir until thick.
Cook fillets in remaining oil for about 3 minutes on each side. Season with salt and pepper and wrap in aluminum foil to keep warm.
Mix tomato mixture with double cream and season with salt and pepper to taste. Remove fillets from foil and place in a shallow ovenproof dish. Spread with tomato cream and sprinkle with Parmesan. Place under preheated broiler and broil, watching carefully, until top is crispy and a crust has formed. Season with pickled green pepper and serve with baguettes and salads if desired.
