Bacon Dumplings in Tomato Sauce
Ingredients
- For the dumpings
- 350 grams day0old White roll
- 200 grams Bacon (Finely diced)
- 1 small onion (finely chopped)
- 3 Tbsps parsley (chopped)
- 4 eggs
- 200 milliliters milk
- 6 Tbsps Pastry flour
- 1 Tbsp softened butter
- salt
- peppers (freshly ground)
Preparation steps
For the dumplings: cut rolls into 1 cm (approximately 1/2 inch) large cubes and place into a bowl.
Cook bacon in hot pan brifely, add onion and saute until translucent. Add parsley and combine mixture with bread cubes, mix well.
Whisk egg with milk and pour over bread mixture. Add flour and butter, season with salt and pepper and mix well. Let stand for about 30 minutes.
For the tomato sauce: rinse leek and halve lengthwise, cut white and light green into small piees. Heat oil in a pan and saute leek for a few minutes, add tomatoes and mash, season with salt, 1 pinch of sugar and pepper. Simmer for about 15 minutes.
Bring a large pot of salted water to a boil, reduce heat and let simmer gently.
Make about 8 dumplings out of bacon mixture (add more flour or milk to make malleable mixture).
Add to water and cook for about 15-20 minutes. Remove wtih a slotted spoon, drain and arrange with tomato sauce on plates. Serve immediately.
