You can use plain hummus instead of beet hummus if you prefer.

- For Hummus
- 1 medium, roasted beetroot
- 1 cup drained chickpeas
- ¼ cup fresh Lime juice
- 2 Tbsps Tahini
- 1 ½ Tbsps olive oil
- 1 Tbsp garlic cloves
- ½ tsp salt
- ½ tsp toasted Cumin
- For Toast
- 2 slices large Sourdough (bread)
- 1 oz pickled onions (for garnish)
- coarse or kosher salt
- 1 Avocado (thinly sliced)

Preparation steps

For Hummus: Blend all ingredients in a blender (or food processor) until smooth

For Toast: Slice avocado and toast both pieces of bread
3.
Spread each piece of toast with hummus, top with avocado slices, pickled onions and sprinkle with salt
