This comforting toast is rich in heart-healthy fats from the avocado.

You can use plain hummus instead of beet hummus if you prefer.

Ingredients

For Hummus
1 medium, roasted beetroot
1 cup drained chickpeas
¼ cup fresh Lime juice
2 tablespoons Tahini
1 ½ tablespoons olive oil
1 tablespoon garlic
½ teaspoon salt
½ teaspoon toasted Cumin
For Toast
2 slices large Sourdough (bread)
1 ounce pickled onions (for garnish)
coarse or kosher salt
1 Avocado (thinly sliced)

1 Blender (or food processor)

Preparation steps

For Hummus: Blend all ingredients in a blender (or food processor) until smooth

For Toast: Slice avocado and toast both pieces of bread

Spread each piece of toast with hummus, top with avocado slices, pickled onions and sprinkle with salt
