- 800 grams Pumpkin
- 1 onion
- 1 carrot
- 1 yellow Bell pepper
- 2 Tbsps butter
- 100 milliliters dry white wine
- 1 Tbsp freshly chopped rosemary
- 2 Tbsps freshly chopped parsley
- 100 grams Crème fraiche
- salt
- freshly ground peppers
- 100 grams Gorgonzola
- 100 chopped Walnut
- 300 grams Lasagne noodle
- 50 grams breadcrumbs

Preparation steps

Cut pumpkin flesh into cubes. Peel and dice onion and carrot. Rinse peppers, cut in half and remove seeds and ribs, dice. Heat butter in a pan and sauté vegetables for 2-3 minutes. Reduce heat, deglaze with wine and add rosemary, parsley and crème fraîche. Season with salt and pepper.

Preheat the oven to 180°C (approximately 350°F).

Successively layer vegetables, cheese, nuts and pasta in a casserole dish until all ingredients are incorporated. End with a layer of walnuts. and top with breadcrumbs. Bake for about 35 minutes until golden brown. If the lasagna is too dark, cover with aluminum foil.
Remove, slice and serve.
