- 250 grams Spinach
- salt
- 1 garlic clove
- 1 Tbsp Pistachio
- 1 tsp lemon juice
- 1 ½ Tbsps olive oil
- 4 thin Turkey cutlets (170 g each)
- freshly ground peppers
- Bell pepper (1 red, yellow and green)
- 2 tsps thyme
- 2 Tbsps clarified butter
- 200 milliliters chicken stock (from the jar)
- 2 Tbsps Crème fraiche
- 2 Tbsps sherry

Preparation steps
1.
Pick out the spinach, rinse and then blanch in salt water for 1 minute. Remove and drain.
Peel and chop the garlic. Chop the pistachios and mix with the garlic, lemon juice and 1/2 tbsp oil. Mix into the spinach.

Flatten the turkey cutlets and season with salt and pepper. Cover with the spinach and roll up. Season the outside with salt and pepper.
Rinse, trim and chop the bell peppers. Sauté, covered, with the thyme in the remaining oil over medium heat for 15 minutes.
3.
Fry the turkey rolls in some butter over medium heat for around 10 minutes. Keep warm.
Mix a rich gravy with the meat juices, the stock, the creme fraiche and the sherry. Season well.
Serve the turkey rolls with the vegetables and gravy.
