Red and Green Soup

- 400 grams Creamed spinach (frozen)
- 1 can pureed Tomatoes
- 1 onion
- 2 garlic cloves
- 1 Tbsp butter
- 200 milliliters Vegetable broth
- 100 grams Whipped cream
- 250 grams Mascarpone
- salt
- peppers
- Nutmeg
- Basil
- 3 Tbsps Ketchup
- Fresh herbs (fresh, to taste)
Preparation steps
Thaw the creamed spinach. Peel the onion and cut into small cubes. Peel the garlic and chop. Mix the onion and garlic together, and divide into 2 servings.
Heat 1 tablespoon butter in two small pots and saute the onion mixture in them. Add the creamed spinach into one pot and the tomato puree into another pot. Pour 100 ml (approximately ½ cup) of vegetable broth into each pot and simmer for 10 minutes at medium heat. Puree the soup in each pot and season with salt and pepper.
Season the spinach soup with nutmeg and stir in 100 ml (approximately ½ cup) of cream. Stir in a little basil and tomato ketchup into the tomato soup, and stir in the cream to taste.
Pour the two soups with a ladle simultaneously in a soup plate and place a little mascarpone cheese in the middle. Garnish to taste with herbs.
