- 2 Tbsps olive oil
- 1 Tbsp unsalted butter
- 1 clove garlic cloves (minced)
- 4 cups mixed Wild mushroom (brushed clean)
- 3 cups chicken stock
- ⅔ cup double cream
- 2 rashers Bacon (streaky, American)
- 2 Tbsps flat-leaf parsley (finely chopped)

Preparation steps
1.
Divide the oil, butter, garlic, and 250 g of the mushrooms between four microwaveable mugs.
2.
Microwave on high for 1 minute. Carefully remove, stir well, and then divide the stock and cream between the mugs.
3.
Cover with clingfilm, poking a few holes. Microwave on medium for 5 minutes, stirring after 2.
4.
Carefully remove from the microwave and blend until smooth using an immersion blender. Season to taste with salt and pepper.

Line a microwaveable plate with two sheets of kitchen paper. Position the bacon and mushrooms on top in a single layer, seasoning the mushrooms with salt and pepper. Top with another sheet of kitchen paper and microwave on high for 3 minutes.
6.
Carefully remove from the microwave and chop the bacon. Reheat the soups in the microwave if necessary before topping with the bacon, mushrooms, and a sprinkling of parsley.
