500 grams green French bean
1 onion (finely chopped)
100 grams Bacon (finely diced)
500 milliliters lamb stock
2 Tbsps clarified butter

Preparation steps

Season leg of lamb with salt and pepper. Rinse beans and cut diagonally into 1-2 cm (approximately 1/2-1 inch) pieces. Blanch in boiling salted water for about 1 minute, drain and rinse in cold water, drain again.

Place onion, rosemary, thyme and half of lamb stock into well-watered clay pot, top with meat and place into a cold oven. Turn oven temperature to 220°C (approximately 425°F) and roast meat for about 90 minutes. Chop bacon finely. Combine with beans and saute in a pan for a few minutes, deglaze pan with remaining lamb stock. Add beans to the lamb and roast for another 20-30 minutes (or until meat is tender). Serve.
