- 4 lamb shanks
- ½ bunch thyme
- 4 rosemary
- 2 yellow paprika
- 8 shallots
- 4 garlic cloves
- 200 grams Cherry tomatoes
- 4 scallions
- 4 Tbsps olive oil
- ½ l lamb stock
- Sea salt
- freshly ground peppers
Preparation steps

Rinse and halve bell peppers, remove seeds and ribs and chop coarsely.

Peel and halve shallots.
3.
Squeeze garlic cloves.
4.
Rinse cherry tomatoes.
5.
Rinse and dry scallions, cut into rings.

Spread shallots and garlic cloves in a roasting dish. Season meat with salt and pepper and arrange on top of vegetables. Roast in preheated oven at 160°C (approximately 325°F) for about 30 minutes. Add broth to the pan and season with herbs and cook for 1 more hour, turning meat over and basting with cooking juices often. If necessary, add more water to the pan. Add remaining vegetables to the pan and cook for 20 minutes more. Season with salt and pepper and arrange on plates, serve immediately.
