2 cups Whole milk
2 cups double cream
1 Vanilla bean (split in half with seeds scraped out)
6 large egg yolks
½ cup superfine caster sugar
½ cup soft light brown sugar

Preparation steps

Preheat the oven to 120°C(100° fan)|250F|gas 1/2.

Warm together the milk, cream, and split vanilla pod in a saucepan set over a moderate heat until simmering.

Whisk together the egg yolks and sugar in a large mixing bowl until pale and thick.
4.
Gradually whisk in the milk and cream mixture until incorporated. Line a roasting tray with a tea towel and arrange four individual heatproof ramekins on top of the towel.
5.
Strain the custard mixture into a jug. Pour boiling water into the tin so that it comes halfway up the outsides of the ramekins, and then divide the mixture between the ramekins.
6.
Transfer the roasting tin to the oven to cook for 1 hour 30-45 minutes until just set. They will be ready when they are firm with a slight wobble when tapped.
7.
Remove to a wire rack and allow the custards to cool slightly before chilling for 4 hours.
8.
When ready to serve, sprinkle the tops of the custards with brown sugar and caramelise using a chef's blowtorch.
