- ¼ cup xylitol
- ½ cup unsalted butter
- 1 ½ cups all-purpose flour (plus extra for dusting)
- 2 tsps Rice flour
- To serve
- sugar-free Orange marmalade

Preparation steps
1.
Butter a 20cm|8" square baking tin.
2.
Beat the butter and xylitol in a mixing bowl until soft and light.
3.
Sift in the flour and ground rice and mix to a dough.
4.
Gently knead the dough on a lightly floured surface for a few seconds. Press into the tin and prick the top with a fork. Chill for 30 minutes.
5.
Heat the oven to 160°C (140° fan) 325°F gas 3.
6.
Bake for about 25 minutes, until cooked but still pale. Cool in the tin for 15 minutes, then carefully cut into squares and place on a wire rack to cool completely.
7.
Serve topped with marmalade
