- 3 cups all-purpose flour (plus extra for dusting)
- 2 tsps ground ginger
- 1 pinch ground cloves
- ½ tsp ground cinnamon
- 1 tsp baking soda
- ½ cup butter (scant)
- ¾ cup light brown sugar
- 1 egg
- 4 Tbsps light corn syrup

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line 2 large baking trays with non-stick baking paper.
2.
Sift the flour, spices and bicarbonate of soda into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
3.
Add the sugar, syrup and egg and mix well to a firm dough.
4.
Roll out on a lightly floured surface, about 5mm thick and cut out stars with a cutter or card template.
5.
Place apart on the baking trays and bake for 10 to 15 minutes until golden brown. Cool on the baking trays for 5 minutes, then place on a wire rack to cool completely.
