DIY Challenge Day 4: DIY Almond Milk
Almond milk makes a great substitute for animal dairy, and it is so easy to make at home. Once you master this simple recipe, you can start adding flavors like strawberries or cacao powder.
DIY Almond Milk
1 cup raw almonds
2 cups of water
Sweetener of your choice (our favorites are maple syrup, honey, and dates)
- Place the almonds in a large container that has a lid. Cover with water until it comes at least 1-inch over the almonds. Cover the container and place in the refrigerator, allow the almonds to soak overnight.
- After the almonds have soaked, drain their soaking water and rinse them. If desired, you can easily remove the skin of almonds by giving them a little squeeze, this will give your almond milk a cleaner color, but is not necessary and does not change the taste.
- Add the almonds and 2 cups of water to the blender, if you are using dates as your sweetener you should add them now as well. Blend on high until the mixture is very smooth and there are no large almond pieces left, 2-3 minutes.
- Line a fine-mesh strainer set over a large bowl with a spout or a measuring cup with cheesecloth. Pour the almond almond/water mixture into the strainer. Gather the cheesecloth together and squeeze the excess liquid out of the almond meal.
- If using honey or maple syrup, stir in to taste. Transfer to a jar with a tight sealing lid and refrigerate.
