- 2 Red Bell pepper
- 2 Red onions
- 1 garlic clove
- 4 Tbsps olive oil
- 600 grams Ground beef
- salt
- freshly ground peppers
- 1 tsp ground Cumin
- ½ tsp ground cayenne pepper
- 3 Tbsps Tomato paste
- 300 milliliters Chicken broth
- 1 can chopped Tomatoes about 400 ml (approximately 1 1/2 cups)
- 1 can Kidney beans about 400 ml (approximately 1 1/2 cups)
- 150 grams canned Corn kernel
- 4 Tbsps Sour cream
- cilantro (for garnish)

Preparation steps
1.
Rinse the bell peppers, remove the ribs and seeds and dice. Peel and dice the onions and garlic. Heat the olive oil in a large saucepan and sauté the ground beef until browned. Add the onions, peppers and garlic and cook until softened.

Season with salt, pepper, cumin and cayenne. Stir in the tomato paste. Deglaze the pan with the chicken broth and mix well. Add the chopped tomatoes, corn and drained kidney beans. Cover and cook for about 20 minutes over medium heat. Ladle into soup bowls and top with sour cream and cilantro.
