- 400 grams starchy potatoes
- 250 grams mixed Ground meat
- 2 eggs
- 1 Tbsp finely chopped parsley
- 1 Tbsp breadcrumbs
- salt
- peppers
- 150 grams Cucumber
- 2 Tbsps Whipped cream
- 1 Tbsp finely chopped Dill
- 1 splash lemon juice
- 2 Tbsps Whipped cream
- 2 Tbsps grated Parmesan
- 3 Tbsps vegetable oil
- scallions (for garnish)
Preparation steps
For the potatoes: Rinse the potatoes and steam for 30 minutes.
For the burgers: In a bowl, stir the ground meat with 1 egg and the parsley. Add enough breadcrumbs to create a workable mixture. Season with salt and pepper to taste. Shape into 4 patties.
Rinse the cucumber and cut into thin slices. In a bowl, stir the creme fraiche with the dill. Season with lemon juice, salt and pepper to taste.
For the potatoes: Cut 4 1 cm (approximately 1/4 inch) thick potato slices. Peel and press the remaining potatoes through a ricer into a bowl. Stir the mashed potato with the remaining egg, cream and Parmesan.
Heat 1 tablespoon of the oil in a skillet. Add 4 portions of the mashed potatoes and cook until golden brown, about 2-3 minutes per side.
For the burgers: Heat 1 tablespoon of the oil in a skillet. Cook the burgers until golden, about 5-6 minutes.
For serving: Warm the potato slices in the oil. Season with salt to taste. Serve the patties on plates with the potatoes slices, potato cakes and cucumber sauce. Serve garnished with chives.
