- 4 slices toasted, country Bread
- ⅓ cup bread and butter Pickle
- 8 ozs deli Roast beef (thinly sliced)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 handful mixed greens
- 4 Tbsps prepared Tartar sauce optional (may substitute mayo or your favorite dressing)
- 1 small Red onion (peeled and sliced)
- Potato chip (to serve)

Preparation steps

Arrange a single layer of pickles on two of the toasted bread slices. Layer with half of the roast beef, followed by the remaining pickles and remaining roast beef. Season to taste with salt and pepper. Arrange lettuce leaves over the roast beef, followed by a generous dollop of tartar sauce and sliced red onion; close sandwich, cut in half and secure sandwich halves with wooden picks. Serve with potato chips.
