1 red Cabbage (shredded)
3 Tbsps Sea salt
1 ⅔ cups Cider vinegar
1 ⅔ cups Red wine vinegar
2 bay leaves
1 Cinnamon stick
1 tsp black peppercorns
2 tsps allspice
1 Tbsp Coriander
5 cloves
2 Tbsps sugar
2 cooking Apple (peeled, cored and thickly sliced)
8 ozs Cherries (pitted)

Preparation steps

1.
Put the red cabbage in a bowl with the salt and mix well. Cover and leave to stand overnight.

Pour both vinegars into a pan and add the spices, seeds, berries and leaves. Bring to a boil, Remove from the heat and leave to stand for 1 hour.

Add the sugar to the vinegar and heat gently, stirring, until the sugar has dissolved. Bring to a boil, add the apples and cherries and cook steadily for 5 minutes. Cover and leave to stand until cold.
4.
Rinse the cabbage thoroughly under cold running water and dry well. Remove the apples and cherries from the vinegar with a slotted spoon and layer with the cabbage into cold sterilised jars.
5.
Strain the cold vinegar over the cabbage, making sure the apples, cherries and cabbage are completely covered. Cover and seal tightly.
