1 Tbsp lemon juice
30 grams cornstarch
100 grams Coconut flakes

Preparation steps

For the meringue, mix egg whites. While mixing, gradually sprinkle in sugar, until stiff. Fold in lemon juice, cornstarch and coconut flakes, one at time.

Place mixture in a piping bag with decorating tip (about 14 mm)(approximately 1/2 inch). Line a baking sheet with parchment paper. Pipe strips, each about 5-6 cm (approximately 2 inches) long onto baking sheet. Bake in preheated oven at 150°C (fan: 130°C, gas mark 2-3) (approximately 300°F), about 15 minutes. Let cool.

For decorating, mix powdered sugar and water to form a moldable icing. Tint icing with red food coloring. Place icing in a piping bag with a small decorating tip. Decorate with icing and sprinkle with a few coconut flakes. To serve, arrange coconut meringues on a plate.
