26 ozs Vegetable broth
1 Cucumber
4 Tomatoes
6 ozs Feta
3 ozs green Olives (pitted)
1 Tbsp fresh thyme

Preparation steps

Add the beans to a pot, and cover with water. Soak the beans overnight. The following day, rinse the beans in a colander. Bring the vegetable broth to a boil, add the beans, and cook for 30 minutes. Drain the beans thoroughly and let cool.

Rinse and trim the cucumber. Halve lengthwise, remove the seeds, and finely dice. Rinse and finely dice the tomatoes. Crumble the feta cheese. Halve the olives. Mix the thyme leaves with the prepared salad ingedients, then season to taste with salt and pepper. Arrange the salad on plates, drizzle with the white wine vinegar and olive oil, and serve.
