Preparation steps

1.

Rinse tomatoes, drain and pat dry.

2.

With a small, sharp knife, peel tomato skin and a small amount of flesh away from inner flesh in a continuous spiral and remove entire peel in one piece.

3.

Roll spiral tomato peel around a straw. Carefully pull apart spiral and shape into a rose.

4.

Remove straw and arrange as desired.

5.

Repeat steps to produce more roses. Refrigerate until ready to use. To serve, sprinkle with a little water and garnish with parsley leaves.
