4 Whole Grain Tortilla
14 ozs Strawberries
5 ¼ ozs Dark chocolate (min. 75% cocoa content)
2 ¼ ozs Heavy cream
1 egg yolk
2 ¼ ozs cream cheese
2 Tbsps whole cane sugar
1 Tbsp Rice flour
2 mint

2 Baking sheets, 1 Knife, 1 Cutting board, 1 Pot, 1 Whisk

Preparation steps

1.

Line two baking sheets with baking paper and line each with 2 tortillas. Clean, wash and slice the strawberries. Chop the chocolate and melt it with the cream over a hot water bath.

Remove 4 tablespoons of it. Stir in the rest of the egg yolk, cream cheese, sugar, and rice flour. Spread the cream on the tortillas and spread the strawberries on top. Bake in a preheated oven at 200 °C / 400 °F for 10 minutes.

Wash the mint, shake dry and pluck the leaves. Remove patties from oven, drizzle with remaining dark chocolate and serve garnished with mint.
