400 grams bread dumpling
180 milliliters milk
150 grams fresh Spinach
1 onion
1 Tbsp vegetable oil
salt
freshly ground peppers
freshly grated Nutmeg
2 eggs
60 grams freshly grated Parmesan
breadcrumbs (as needed)

Preparation steps

Place the croutons into a large bowl. Boil the milk, pour over the bread, and soak for about 15 minutes.

Meanwhile, rinse the spinach, trim, spin dry and finely chop. Peel the onion, chop finely and saute in a pan with oil until translucent. Add the spinach, cook briefly, then remove from the heat.

Add the mixture to the soaked bread and season with salt, pepper, and nutmeg. Beat the eggs and add to the bread mixture along with 40 grams (approximately 1 1/2 oz) parmesan and knead by hand until combined. If necessary, add some bread crumbs, so that the mixture is malleable.

In a saucepan, bring salted water to a boil. With moistened hands, form the mixture into dumplings. Once all the dumplings are shaped, carefully drop into the boiling water, lower the heat and simmer for about 20 minutes.

Melt the butter. Remove the dumplings from the water with a slotted spoon and drain. Serve on plates and drizzle with the butter. Serve with freshly grated Parmesan.
