¾ cup Red lentils
1 cup white Long grain rice
1 small onion (finely chopped)
2 cloves garlic cloves (finely chopped)
1 tsp salt
½ cup breadcrumbs
1 cup grated carrots
2 eggs (beaten)
1 ½ cups grated Parmesan
½ tsp freshly ground Black pepper
½ tsp crushed Red pepper flakes
½ tsp ground Cumin
cup tomato passata
2 Tbsps rolled oats
To serve
Tomato Chutney
To garnish
Arugula

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm x 10cm|8" x 4" baking dish.

Put the water and lentils into a large pan and bring to a boil. Reduce the heat, cover and simmer for 5 minutes.

Add the rice, onion, garlic and salt and mix well. Cover the pan and simmer for 15-18 minutes until the liquid is absorbed and the lentils and rice are tender. Remove from the heat and allow to cool for 10 minutes.

Stir in the breadcrumbs, carrots, eggs, cheese, pepper, cumin, pepper flakes and passata and mix well.
5.
Press the mixture firmly into the dish and sprinkle with the oats. Bake for 40-45 minutes, until the top of the loaf is golden. Remove from the oven and cool in the tin for 10 minutes.
6.
Cut into slices and serve with tomato chutney. Garnish with rocket and cherry tomatoes.
