28 ozs mie noodles
14 ozs shrimp (with shell)
10 ozs turkey cutlets
5 ozs clam
4 scallions
1 stalk Celery
1 bunch cilantro
2 ½ ozs Mung bean sprouts
2 Tbsps Peanut oil
1 tsp roasted sesame oil
1 tsp Sambal oelek
1 tsp Oyster sauce
1 Tbsp soy sauce
1 Tbsp Sesame seeds

Preparation steps

Let pasta just swell in hot water according to package directions or cook briefly.

In the meantime, peel the shrimp so that the tail fin remains. Rinse and pat dry. Rinse turkey cutlet meat, pat dry, and slice thinly. Rinse mussel meat and pat dry. Clean and wash spring onions and cut them into pieces about 1-inch long. Wash celery and cut it into thin slices. Wash cilantro, shake dry, and chop finely. Rinse sprouts in a sieve and drain well.

Heat both oils in a wok. Add shrimp, meat, mussels, green onions and celery and fry over high heat for 2-3 minutes until very hot and lightly browned.

Add drained noodles, sprouts and coriander and season with sambal oelek, oyster sauce and soy sauce. Sprinkle Hokkien Hae Mee with sesame seeds and serve.
