21 ozs Salmon fillet (skinned, ready to cook)
lemon juice
1 cup Camembert (sliced)
16 slices Baguette (cut at an angle)
4 Tbsps Dijon mustard

Preparation steps

1.
Preheat the grill.
2.
Cut the fish in the 1 cm thick pieces, season with salt, ground black pepper and lemon juice and grill on both sides until golden brown. Remove from the grill and set aside.
3.
Place a slice of cheese and a piece of salmon on 8 pieces of baguette. Top with the rocket. Spread the remaining baguette slices with mustard and place on top. Tie the sandwiches together with kitchen twine.
4.
Place the sandwiches on the hot grill and toast until golden brown. Serve immediately.
