Preparation steps

1.

Put the sushi rice in a bowl with plenty of cold water and rinse by hand in a light circular motion for 1 to 2 minutes. Drain the water and repeat the procedure until the water is clear. Drain well in a colander.

2.

Put the rice in 250 ml (approximately 1 cup) of water in a pot. Cover and bring to a boil. Simmer on low heat about 15 minutes, until rice swells.

3.

Meanwhile, place the rice vinegar, sugar and kombu seaweed in a pot and heat until the sugar is dissolved.

4.

Pour the rice in a bowl with the marinade and mix gently with a serving spoon or chopsticks and let cool.

5.

Now the rice can be used to make sushi.
