1 onion (peeled and chopped)
4 Chicken thigh (skinned, deboned and chopped)
2 red peppers (deseeded and chopped)
1 yellow pepper (deseeded and chopped)
1 green pepper (deseeded and chopped)
2 cloves garlic cloves (finely sliced)
2 cups red Kidney beans (or black beans, drained)
6 ripe Tomatoes (cored and chopped)
2 tsps smoked paprika
1 Lime (juiced)
2 dried chili peppers (rehydrated and chopped)

Suggested variation: Chicken Chilli This is only a few steps away from chilli. Use canned tomatoes, a little sliced chorizo and 1 tsp cocoa powder all simmered for 30 minutes.

Preparation steps

Heat the oil in a large pan and cook the onion until golden. Add the chicken thighs, increase the heat slightly and cook until patchily golden.

Add the peppers and fry for 4 minutes or until starting to soften, then add the garlic and cook for another minute.
3.
Add the beans, tomatoes, paprika, lime juice and chillies and a glass of water and simmer for 10-15 minutes until the chicken is cooked and all is tender.
4.
Season well and serve hot with crusty bread.
