½ organic lemon
2 slices white bread
400 grams Ground meat (pork)
2 Tbsps freshly grated Parmesan
1 egg
2 Tbsps freshly chopped thyme

2 Tbsps olive oil

Preparation steps

1.

Rinse artichokes, break away stalk, cut away hard leaf tips and remove outer leaves. Place in a pot. Drizzle cut surfaces with lemon juice.

Soak bread in a little water. Express, break apart and add to minced meat in a bowl. Mix and add Parmesan, egg and thyme. Season with salt and pepper, mix well and place in artichokes.

Peel garlic and finely chop. Rinse tomatoes, cut away stalks and dice. Mix with garlic and spread over artichokes. Season with salt and pepper and drizzle with oil. Cover and bring to a boil. Simmer gently for about 50 minutes or until artichokes are tender. Add water if necessary.

4.

Spoon sauce into a bowl and top with artichokes. Serve warm.
