Preparation steps

1.

Lightly toast the pine nuts in a dry pan. Rinse the parsley and basil, pat dry, and remove the leaves from the stems. 

2.

Drain the sun-dried tomatoes, reserving the oil. Puree the tomatoes, pine nuts, herbs, lemon juice, and cheese completely. 

3.

Measure 60 ml (approximately 2 ounces) of the reserved tomato oil. With the motor running, incorporate the oil into the pesto until blended well. Season to taste with salt and pepper.
