12 ozs Pappardelle noodles

1 Tbsp butter
1 Tbsp olive oil

3 Tbsps freshly grated Parmesan

Preparation steps

1.

Rinse the zucchini, trim and thinly slice with a vegetable peeler. Finely grate the lime zest and squeeze the juice. Toast the pumpkin seeds in a dry frying pan, let cool and then chop.

Cook the pasta in boiling salted water until al dente.

Heat the butter and olive oil in a large skillet. Add the zucchini and sauté for 1-2 minutes. Add the lime zest and lime juice and simmer for 2-3 minutes. Season with salt and pepper.

4.

Drain the pasta and toss with the sauce. Arrange on serving plates and sprinkle with pumpkin seeds and Parmesan.
