200 grams cooked ham
150 grams Feta
300 grams Cherry tomatoes
1 Red onion
1 bunch Arugula
3 slices thick white bread
2 Tbsps butter
1 Tbsp White vinegar
1 Tbsp balsamic vinegar
4 Tbsps olive oil
1 tsp Maple syrup
salt
freshly ground peppers
1 Tbsp scallions

Preparation steps

1.

Trim the ham of any fat and cut into bite-sized cubes. 

2.

Cut the feta cheese into cubes. Peel the onion coarsely chop. Rinse and halve the cherry tomatoes. 

3.

Rinse the arugula, spin dry and remove any hard stems. 

4.

Whisk together the white vinegar, balsamic vinegar and maple syrup. Gradually add the olive oil while whisking vigorously. Season with salt and pepper to taste.  

5.

Cut the bread slices into cubes. Heat the butter in a large pan and fry the bread cubes until golden brown on all side. Drain on paper towels. 

6.

Toss the arugula, ham, feta cheese, cherry tomatoes, red onion and toasted bread cubes together in a large bowl. Drizzle with the dressing and sprinkle with chopped chives.
