1 chicken
3 Tbsps olive oil
3 Bell pepper (1 red, 1 yellow, 1 green)
1 onion
2 cloves garlic cloves
4 Tomatoes
1 sprig rosemary
4 sprigs thyme
2 Anchovy fillet
1 Tbsp Caper
0.333 cup green Olives (stoned)
cup white wine
Sea salt
chili peppers
chopped Basil (to garnish)

Preparation steps

1.
Wash and dry the chicken and joint into 8 pieces.
2.
Wash, halve, core and roughly dice the peppers.
3.
Peel and dice the onion and garlic.
4.
Drop the tomatoes into boiling water for a few seconds, refresh in cold water, then skin, quarter and deseed.
5.
Season the chicken pieces with salt and pepper. Heat the oil in a pan and brown the chicken pieces on all sides. Take out of the pan. Put the peppers, onion, garlic, rosemary, thyme and a little chilli into the pan and sweat briefly. Stir in a little white wine, add the anchovies, capers, tomatoes and olives and return the chicken pieces to the pan. Cover and cook gently over a low heat for about 45 minutes. Stir occasionally and add the rest of the wine as necessary. Finally season to taste with salt and chilli and serve scattered with basil.
