4 ozs Whipped cream
2 ozs sugar
13 ozs Yogurt (low-fat)
4 Pear
1 pc ginger (1 ounce)
6 ozs Apple juice

Preparation steps

1.

Drain lingonberries and collect all juice. Combine cream and sugar in a saucepan and heat until sugar has dissolved. Remove from heat and allow to cool, stirring. Add yogurt and 1 tablespoon of collected juice into cream mixture (use remaining use juice otherwise.)

Cover and put into the freezer. For the first 2-3 hours, stir every 30 minutes vigorously with a fork. Once ice cream is half frozen, add drained lingonberries. Return to freezer and freeze for 2-3 hours. (Alternatively, prepare ice cream in an ice cream machine.)

Peel pears about 1 hour before the end of freezing ice cream. Peel and grate ginger. Combine apple juice with ginger in a saucepan and heat, add pears and simmer on low heat for about 30 minutes. Cool.

Halve drained pears crosswise and arrange in 4 plates (one pear per bowl). Place ice cream around and serve.
