Preparation steps

Peel, core, and slice the quinces. Place in a bowl and drizzle with the lemon juice. Slit the vanilla pods lengthwise and scrape out the seeds. Add the seeds, vanilla pods, sugar, clove, 250 ml (approximately 8 ounces) of water, and the wine in a saucepan and bring to a boil. Add in the quince slices, and cook coovered, for about 30 minutes until tender but not falling apart. Immediately fill in a glass and let chill in the refrigerator.

Serve with a cheese platter, with a cheese like Tete de Moine or a sharp mountain cheese such as Gruyere.
