1 Beef fillet (weighing 1 kg)
¼ cup dried Apricot
cup sliced almonds
½ Tbsp rosemary
2 Tbsps Dijon mustard
olive oil

Preparation steps

1.
Preheat the oven to 200°C (180 fan) | 400°F | gas 6.

Season the beef fillet and place it in a roasting tin.
3.
Whiz the apricots, almonds and rosemary leaves in a food processor to fine crumbs. Spread the mustard over the top of the beef fillet to act as a glue. Pat the crust onto the beef then drizzle with oil.
4.
Bake in the oven for about 20 minutes for rare beef, 25 minutes for medium-rare. Allow to rest for 10 minutes before serving.
