1 Tbsp Semolina flour

Preparation steps

1.

Scrub potatoes and cook in salted water for about 25-30 minutes. Drain and let evaporate briefly, peel and press through a potato ricer, cool. Add eggs and enough flour and semolina to make malleable dough. Season with salt, nutmeg and pepper.

With floured hands, shape into finger-sized rolls and make pointed ends.

Peel onions and cut into thin rings. Heat butter in a pan and saute onions for a few minutes. Add breadcrumbs and saute until golden brown, stirring.

Heat butter in a pan and fry noodles, few at a time, until golden brown. Remove from the pan and keep warm.

5.

Combine noodles with onion mixture carefully. Arrange on plates and serve immediately.
