500 grams Beef (from the shoulder)
1 ½ liters Beef broth
1 bay leaf
1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion, ready to cook)
1 kilogram potatoes (peeled and sliced)
125 grams marbled Bacon
400 grams onions
75 grams Lard
salt
freshly ground peppers
125 milliliters Whipped cream

Preparation steps

1.

Combine beef with soup vegetables and bay leaf in a large pot, add  broth and bring to a boil. Reduce heat and simmer, covered, for about 1 1/2 hours. Remove meat from the pot and cool slightly, cut into bite-sized pieces. Strain broth into a bowl.

Heat butter in a large pan. Add bacon and onions and saute for a few mintues, stirring. Add meat and potatoes and cook for a few minutes. Add broth and simmer, covered, for about 15 minutes on medium heat. Season with salt and pepper and add sour cream. Mix well and serve.
