1 cup breadcrumbs
2 cups Corn flakes (crushed)
2 Tbsps Parmesan (grated)
½ tsp salt
1 Tbsp all-purpose flour
1 egg (beaten)
2 ½ cups skinless, boneless Chicken breasts (cut into strips)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.
2.
Mix together the breadcrumbs, cheese, cornflakes and salt.
3.
Put the flour into a shallow dish.
4.
Dip the chicken in the flour to coat, then into the egg and then into the breadcrumb mixture.
5.
Place on the baking tray and bake for about 20 minutes, until cooked and golden.
6.
Serve with guacamole.
