½ cup butter
¼ cup Corn starch
¾ cup all-purpose flour
¼ cup powdered sugar
¾ cup Shredded coconut
5 Tbsps Lemon curd

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.

Beat the butter until soft in a mixing bowl.

Work in the cornflour, flour and icing sugar, using your fingers. Form into small balls and roll each one in the desiccated coconut.
4.
Place the balls well apart on the baking trays and press down lightly with the back of a fork.
5.
Bake for 15-20 minutess until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
6.
Sandwich the biscuits together with lemon curd.
