2 Tbsps lemon juice
300 grams sugar
2 tsps Ground cinnamon
350 grams ground almonds (with skins)
50 grams chopped almonds

Preparation steps

1.

Beat egg whites with a pinch of salt until stiff. Gradually sprinkle in the sugar and beat until a smooth meringue has formed. Beat until glossy and stiff with the lemon juice. Set aside 3-4 tablespoons of the mixture for the glaze and chill.

Mix the remaining egg whites with the cinnamon and almonds (ground and chopped). Knead to a smooth dough.

Sprinkle remaining ground almonds on the work surface. Roll out the dough 6-8 mm (approximately 1/4 inch) thick, cut out star shapes and place on a parchment paper-lined baking sheet. Spread with the glaze.

Allow to dry overnight at room temperature.

Preheat the oven to 120°C (approximately 250°F).

Bake stars in the oven until cookies are dry and the glaze is bright, about 25 minutes. Allow to cool on the baking sheet.
