4 Tbsps soy sauce
3 tsps honey
4 Chicken breasts
1 Tbsp Sesame seeds
½ bunch cilantro
1 tsp freshly grated ginger
1 red chili pepper
3 Tbsps White vinegar
5 Tbsps Walnut oil
salt

1 ripe Mango

Preparation steps

1.

Mix together soy sauce and 2 teaspoons honey. Put chicken breasts in a bowl and top with honey miture. Marinate for about 1 hour in the refrigerator.

Meanwhile, rinse cilantro, shake dry and set aside some leaves for garnish. Coarsely chop the rest. Slice chile lengthwise, remove the ribs and seeds, rinse and finely chop chile. Add cilantro, ginger, remaining honey, chile and vinegar, season with salt and pepper, then whisk in 3 tablespoons of walnut oil for a dressing.

Remove chicken from marinade, pat dry and season with salt and pepper. Fry chicken in remaining oil for 2 - 3 minutes on each side. Add marinade and let simmer for 2 - 3 minutes until syrupy.  Remove chicken from pan and let cool.

Peel mango, slice flesh from pit and cut into cubes. Slice chicken breasts thinly on the bias.

Arrange chicken and mango slices decoratively on plates, drizzle with dressing, sprinkle with sesame seeds and serve garnished with cilantro leaves.
