9 ozs Apple
2 tsps Canola oil
3 ozs Apple juice
24 ozs Vegetable broth
5 ozs Soy creamer
salt

Preparation steps

1.

Peel celeriac, potatoes, shallot and 1 apple, remove apple core; dice all ingredients.

Heat 1 tsp. oil in a saucepan. Sauté shallot in it over medium heat. Add vegetable and apple cubes and sauté for 2-3 minutes. Deglaze with juice and boil down for 2 minutes, then add broth and soy cream. Season with salt and pepper and simmer over medium heat for about 20 minutes.

In the meantime, clean the celery stalk, remove the stalks if necessary, wash and cut into fine slices. Clean, wash, core and finely dice the remaining apple. Heat remaining oil in a pan. Sauté celery slices and apple cubes in it for 5 minutes over medium heat.

Finely puree soup and season with 1 squeeze of lemon juice. Divide soup among plates and garnish with steamed apple-celery mix. Serve with whole wheat bread.
