¼ oz ginger (1 piece)
7 ozs carrots
7 ozs Apple
2 ½ ozs Walnut
1 ½ ozs Date (pitted)
3 Tbsps Coconut oil
3 ozs old fashioned Oats
6 ozs Whole wheat flour
1 tsp Baking powder
1 tsp cinnamon
½ tsp salt
4 Tbsps Maple syrup

Preparation steps

1.

Peel the ginger and grate finely. Peel carrots. Wash and seed the apple. Coarsely grate apple and carrots. Chop walnuts and dates. Put coconut oil in a pot and melt at low heat.

Mix oats, flour, baking powder, cinnamon, and salt. Add walnuts, dates, apple, carrots, ginger, coconut oil, and maple syrup and mix thoroughly until a dough is formed.

3.

Form 12 round cookies of about the same size from the dough and bake in a preheated oven at 350°F for about 35-40 minutes on a baking tray lined with baking paper. Let them cool down before serving.
