100 grams blanched almonds
100 grams dried Apricot
1 fresh Orange (zested and juiced)
400 grams Pastry flour
1 pinch salt
½ packet Baking powder
1 packet Vanilla sugar
250 grams sugar
4 eggs
1 egg yolk (for brushing)

Preparation steps

1.

Toast almonds in a dry pan and chop coarsely. Dice apricots into small pieces.

In a bowl, mix flour with salt, baking powder, vanilla sugar and sugar and whisk with eggs, orange zest and 1 -2 tablespoons of orange juice until smooth. Add almonds and apricots.

Divide dough into 2 rolls about 6 cm long (approximately 2 1/2 inch) and place on a greased baking sheet. Flatten and brush with beaten egg yolk.

Bake in preheated oven at 180°C (approximately 350°F) for about 15 minutes or until lightly browned. Remove from oven and sprinkle with remaining orange juice and cut into 1 cm (approximately 1/2 inch) thick slices. Bake in the oven for another 10-15 minutes or until slices are crisp, turning once. Remove from oven, cool and serve.
