750 grams Beets
¾ l Vegetable broth (from a jar)
lemons (juiced)
salt
peppers

1 Apple
1 scallion (chopped)
carrots
crispy, fried duck legs (chopped)

Preparation steps

Peel and cut beetroots into cubes. Bring broth to a boil and simmer beetroots for 20 minutes on low heat. Remove 2-3 tablespoons of beetroots and puree the rest. Strain through a sieve, reheat and season with lemon juice, salt and pepper.

Rinse apple, quarter and core. Cut into slices. Pour soup into bowls, top with apple pieces, beetroot cubes, duck meat, carrot slices and scallions. Serve.
