150 grams Pastry flour
250 milliliters milk
1 Tbsp powdered sugar
1 pinch salt
4 eggs
2 tsps finely grated Orange peel
2 medium Russet apples
2 Tbsps lemon juice
120 grams smoked Bacon
butter (for greasing the pan)

Preparation steps

1.

Whisk together the flour, milk, powdered sugar, salt, eggs and grated orange peel until smooth. Cover and let stand for about 30 minutes.

Peel the apples, cut into quarters, remove the cores and slice thinly. Toss the apple slices in the lemon juice. Cut the bacon into small pieces.

Heat a bit of butter in a non-stick pan and add 1/4 of the bacon and apple slices. Cook over medium heat until the bacon is crisp and apples have softened.

Ladle 1/4 of the pancake batter over the apples and bacon and cook until small bubbles begin to rise to the top. Flip the pancake and cook until golden brown. Keep warm in the oven and continue with the remaining bacon, apples and pancake batter. Serve with maple syrup or a scoop of vanilla ice cream, if desired.
