1 onion
2 Tbsps butter
2 Tomatoes
8 eggs
50 grams Whipped cream

Preparation steps

1.

Peel the lower third of the asparagus stems and cut off tough ends. Cook asparagus in boiling salted water until al dente, about 10 minutes. Lift out of pot and rinse in ice water.

Peel the onion and chop.

Heat butter in a large pan, add the onion and fry over low heat for about 5 minutes. Rinse the tomatoes, trim, cut into eighths and remove seeds.

Mix eggs with the cream and season with salt, pepper and nutmeg. Stir in the cheese.

Add asparagus and tomatoes to the pan, heat briefly, then reduce the heat, pour in the egg mixture and cook over very low heat until thickened, 8-10 minutes. Preheat oven broiler to high. Broil the frittata for 3-4 minutes under the oven broiler, watching carefully. Cut into pieces and serve.
